1/2 cup (115g) red lentils (washed) 1/2 medium onion (chopped) 1 tsp sunflower oil 1 tbsp tomato puree 1/2 heaped teaspoon mixed herbs 1 1/2 cups boiling water 2 medium tomato (cut into sixteenths) 1 cloves of garlic (crushed)
1.  Heat the oil in a pan 2.  Add the onion and fry for about 3 mins 3.  Add the mixed herbs and tomato puree 4.  Stir in the lentils and add the water 5.  Bring to the boil and simmer for about 10 minutes 6.  Add the tomato and garlic.  Cook for a further 2 minutes. Serve on a bed of boiled wholemeal spaghetti, along with a green salad!
