• 150g pork fillet (trimmed of fat)
  • small red onion
  • 1 tsp vegetable oil
  • 1 pak choy (peeled and washed)
  • 120g tenderstem broccoli
  • 1 small red chilli (or to your desired taste)
  • 1 clove of garlic
  • Dry noodles (you can use fresh, follow pack cooking instructions instead)
  • 1 tablespoon soya sauce
  • Chop the onion, garlic and chilli add to a frying pan with the oil and cook on a low heat.
  • Cut the pork into strips and add to another pan, moving until seared on all sides. Add to the onion, chilli and garlic mixture and continue to cook on a low heat.
  • Meanwhile, boil the tenderstem broccoli for 3 minutes. drain and add to the pork stir-fry.
  • Get your noodles ready by adding them to a pan of boiling water, these should only take 5 minutes or so.
  • Add the peeled pak choy to the pork stir fry and stir until the leaves wilt.  Add the soya sauce and continue to mix on a low-med heat.
  • Serve piping hot.

        1. I find it much easier to serve more appropriate portions, for the individual by serving the noodles separately.
